yeah, that cluster of dead leaves on top of the cola in first picture hints at a problem underneath. i'd gently try to look underneath for greay or white 'fuzz' or any dsicoloration of the calyxes.
Don't try to pick the number of days. It should be a reaction to what you see. That will keep your results consistent from grow cycle to grow cycle. Also, if you get a number in your head it often skews the decision process. Just observe it and have an honest reaction.
Looks like you have a new wave of growth and some older growth... could be genetics, could from waiting too long to chop it. In either case, i'd worry about the bulk and not too much about limited new wave of pistils/calyxes. if over-ripe is the context, then bud rot becomes more likely too.
