Does anyone know what type of mushroom this is growing in my soil? Probably too early to tell. Also, should I get rid of it?

Looks like a tiny saprophytic mushroom, which is common in moist, organic-rich soil. It’s too early to ID the exact type, but it’s not harmful to your plant. That said, it’s still a good idea to remove it. Mushrooms like this can be a sign that your soil is staying too wet or your humidity is running high. Gently pull it out, avoid disturbing the soil too much, and let the top layer dry a bit more between waterings. Improving airflow can also help keep them from coming back.

You really need pictures of all sides of a mushroom (including underneath) to ID it. If you are more curious you can download an app like Mushroom Identificator (not as good as some, but still free) to get an idea of what it might be. To get further detail you would rip the stem off, place the cap on a white sheet of paper and cover it with a glass and leave it undisturbed for 24 hours. Based on the color of the spores left on the paper you can refine the list of mushrooms down to the most likely candidate(s). That being said, most mushrooms are inedible, and there are many that are poisonous to eat. It doesn't look like anything I forage for, lol, but I focus on choice mushrooms. That being said, they won't harm your plant and might help them.

I mean, you can pluck it out, but that's just the fruiting body of the fungus.... Just don't keep the soil too moist and they should vanish.
