The buds are producing new pistils in its last weeks. Is this normal? Is it something to take in account with the harvest time?

Ignore that and cut when is 10% amber for high THC if you want more couch lock cut later 🍻

The pistols play only one role - reproduction. The pistols are the one that are trying to catch the pollen from the male plants and then produce seeds. Nothing more. The pistils are not something that you should worry about.

is it worth letting the rest over-ripen for afew new calyxes? even less so if it foxtails, as those are usually larfy, but not always. I've had some knobby weed that got dense even on the knobs. LA Peyote ?kush? by seedsman did it. (LA peyote - whatever it's called) each to their own... my 2 cents is not focus on ripening of the bulk.

It is trying to start fox tailing. Just stick to schedule and harvest when trichromes are ready to desired ripeness.
